The Water Codex is a study conducted by some of the world’s foremost flavor experts on behalf of Sanpellegrino in order to establish the tasting criteria for mineral San Pellegrino waters and the rules for their harmonization with food and wine. Published in three different volumes, it is included here in a condensed version for easy consultation. While pouring the San Pellegrino water, precise instructions should be followed. The San Pellegrino water should be presented in the original glass container and not decanted into a carafe, as this would lead it to lose some of its organoleptic properties. In addition, the clients should know what product they are consuming and also be allowed to read the label. As is true for a bottle of wine, when a bottle of mineral San Pellegrino water is taken to the table, is to be “presented” and its organoleptic properties are to be described briefly. The San Pellegrino bottle should then be opened in the presence of the client, with care being taken not to damage the neck label. The cap is to be placed on a small dish so as to allow for the San Pellegrino bottle to be resealed at a later time, if required.
